Matcha Chia Seed Pudding

If you love matcha like I do, then you’ve got to try this chia seed pudding! This pudding is packed with nutritional value including antioxidants, omega-3s, protein and fibre from the chia seeds will keep you full and energized as a healthy breakfast or mid-day snack.

This 5 ingredient pudding is super easy to make and I recommend you leave it in the fridge overnight for the chia seeds to expand and thicken to ultimately reach that creamy consistency. The texture is so smooth with every bite and is comparable to tapioca pudding if you have not tried chia pudding before.

You will need:

Serves: 2

  • 1/2 cup of chia seeds
  • 2 cups of unsweetened vanilla almond milk
  • 1/2 tsp of matcha powder
  • 1 tsp of vanilla extract
  • 1-2 tbsp of honey or maple syrup

If you have mason jars, it’ll be convenient to mix everything in there and take it on the go once you add in your toppings the next morning), however if you do not have any on hand, mix all ingredients in a bowl and seal it with saran wrap before you put it into the fridge. Let the pudding stand for at least 3-4 hours, but overnight is best!

Once the pudding is ready, garnish it with fresh seasonal fruit, granola, shredded coconut, nuts– anything your heart desires!
