I was craving for pancakes one day.
Who needs pancake mix when you have greek yogurt? With additional yogurt in the fridge, I decided to try my hand at making pancakes with greek yogurt. I also used whole wheat flour for an extra “healthy” spin on these. They turned out nice and fluffy like your usual pancakes and I didn’t feel guilty for eating an extra one!
You will need:
Servings: Makes 6 medium sized pancakes
- 2 cups of greek yogurt
- 1 egg
- 3/4 cup of whole wheat flour
- 1 tsp baking soda
- Toppings of your choice: ie. berries, chocolate chips, bananas
First mix the greek yogurt and egg:
Then add in the flour and baking soda:
Next add in any additional toppings of your choice:
Mix to incorporate and prep an oiled medium heated griddle or frying pan. Scoop the batter on to the pan and brown on both sides. Top it off with some drizzled maple syrup and any other desired toppings!
