Greek Yogurt Veggie Dip

I had a bunch of veggies in the fridge and an extra tub of Greek yogurt that needed to be used.

I already made greek yogurt oat/banana/coconut/chocolate chip cookies the night before, but needed to come up with something else! With friends coming over, this was the perfect time to make a dip.

This was my first time making a dip with greek yogurt and what I love about making a dip is that you can add more or less of certain ingredients to make your perfect dip. I honestly eyeballed everything and this recipe contains estimated measurements of what I used!

You will need:

  • 2 1/2 cups of greek yogurt
  • 1 1/2 cups of finely shredded carrots (in a food processor works best)
  • 1 cup of spinach (finely chopped)
  • half a red pepper
  • half a small onion
  • 1 tbsp green onion
  • 5-6 cloves of garlic
  • 1-2 tsp cayenne pepper
  • 2 tsp paprika
  • 1 tbsp honey
  • salt to taste
  • ground pepper to taste

First put the yogurt in a mixing bowl to use as the base:

Add in all the veggies & mix!

Next, add in all the spices.

There you have it, a savoury dip to have with chips or raw veggies — your choice!
